Juniper Berry Oil  Juniper berry oil is a versatile essential oil extracted from the berries of the small, evergreen juniper tree. While there are around 60 species of juniper in total, only the berries of *Juniperus communis* are used in cooking or aromatherapy. Juniper berry oil is produced via steam distillation, a gentle method for extracting essential oils. Dried juniper berries are placed in a distillation apparatus through which steam is passed. The steam permeates the berries, releasing the essential oils contained within them. The oil rises along with the steam and is then guided through a cooling element—such as a cool pipe or tube—causing the steam and the essential oils it carries to condense back into liquid form. Finally, the juniper berry oil is separated out.
