 Juniper berry oil

 Juniper berry oil is a versatile essential oil extracted from the berries of the small, evergreen juniper tree. There are around 60 juniper species, but only the berries of Juniperus cummunis are used in cooking or aromatherapy.

 Juniper berry oil is produced by steam distillation, a gentle process for extracting essential oils. Dried juniper berries are placed in a distillation apparatus through which steam is passed. The steam permeates the juniper berries and dissolves the essential oils within them. The oil rises with the steam and is then passed through a cool pipe or hose, for example, so that the steam and the essential oils it contains liquefy. The juniper berry oil is then separated.
